All about Tarragon

Tarragon , French, is a perennial herb that grows the best in zones 4 to 8 and can get to a height of 2 feet. Plant in well drained fertile soil with compost in spring or summer. Allow 2 square feet per plant and place in full sun. You may pick the leaves at any time or snip the branches for drying. Similar to anise in flavor, french tarragon has a very powerful smell and flavor, so use lightly in cooking.

FRESH TARRAGON BUTTER
Ingredients:
1/4 cup minced fresh tarragon
1/2 cup butter, softened
1/8 teaspoon lemon juice
Dash salt and pepper
Directions:
In a small bowl, beat all ingredients with a whisk or fork until well blended. Shape into a log; wrap in plastic wrap. Refrigerate for a week or freeze for several months. Slice and use on fish, poultry, vegetables, pasta and bread. Yield: 1/2 cup.
