All about hyssop
Hyssop is a perennial with lovely blue spires of flowers that grow 1-3 ft tall in zones 4-9. Hyssop has a strong minty flavor but can become bitter if too much is used at one time. It is often used with greasy foods to aid in digestion. Hyssop prefers full sun but tolerates partial shade. You can use the flowers and leaves for salads, or to seaon stuffing or casseroles, soups or poultry dishes. The flowers can also be used fresh or dried for flower arrangements and potpourris.

Aromatherapy using hyssop
I have a very small "crock pot" that I fill with water and add a few spigs of hyssop and just let it simmer to add a wonderful scent to my home.
