All about Chives

CHIVES (Allium schoenoprasum) uses are culinary & ornamental; full sun; moist, fertile, well drained soil; blue-green foliage; can be started from seeds . Chives are perennials that grow 12-18 inches.  They have small ball shaped clusters of tiny pink flowers in mid spring.  Chives have long hollow leaves with a mild onion flavor.  Mince the leaves and add to your salads, soups, or in any main dish that can be enhanced with the mild onion flavor.

Mashed potatoes with chives  

1/4 cup chopped fresh chives
2 pounds  potatoes, peeled and quartered
1/2 cup milk
1/2 cup sour cream
salt and pepper to taste
 
Place potatoes in a large pot with enough water to come up 2 inches from the bottom. Bring to a boil, and cook for 20 to 25 minutes, until fork tender. Drain, and mash. Mix in the milk using a potato masher or an electric mixer until fluffy. Stir in the sour cream and chives, and season with salt and pepper.

Herb butter

 1/4 teaspoon cold water
1/2 teaspoon dried thyme
1 tablespoon minced parsley
1 tablespoon minced dill
1 tablespoon minced chives
1/2 cup butter, softened
Dash garlic powder
Dash cayenne pepper

 

Combine all ingredients. Yields 2/3 cup.
