All about Chamomile

Chamomile is best know for it's soothing and relaxing properties in tea.  Chamomile has abundant daisey-like flowers.  Ther German chamomile is an annual, and grows 2-3 ft tall, while its Roman cousin is a perennial, and generally only get 8-10 inches tall.  Both make excellent teas. Both varieties prefer sun but will tolerate some shade.   To harvest the flowers, wait until they are fully open, and pinch off. Dehydrate or screen dry.

Chamomile Tea  

4 teaspoons of dried Chamomile flowers

4 cups of water

honey to taste

lemon juice to taste

Bring water to boil, then add Chamomile flowers, cover, and boil for around 30 more seconds. Remove from heat and let stand for 2 minutes. Strain, and add honey and lemon to taste. Makes 4 cups
